Description
Thinly sliced beef, briefly marinated so it stays tender, stir-fried hot with broccoli in a savoury oyster sauce.

What’s in the kit

You’ll also need
- 400 g flank or sirloin steak, thinly sliced across the grain
- 1 tbsp cornflour
- 1 head broccoli, in florets
- 2 cloves garlic and 1 tsp ginger, minced
- 1 tsp sugar and 1/2 cup water
- 2 tbsp vegetable oil
Method
- Toss the beef with 1 tbsp soy sauce and 2 tsp cornflour. Leave 10 minutes.
- Mix the oyster sauce, the rest of the soy sauce, sugar, the remaining cornflour and the water.
- Blanch the broccoli in boiling water for 1 minute and drain.
- Heat a wok until smoking, add 1 tbsp oil and sear the beef in one layer for 1–2 minutes. Remove.
- Add the rest of the oil, fry the garlic and ginger for 30 seconds, then return the beef and broccoli with the sauce. Toss until glossy and thickened. Serve with rice.
Cook’s tip: Cook the beef in batches if your wok is small. Too much in the pan steams the meat instead of searing it.
