Description
Jollof flavour in half the time. You break the spaghetti and simmer it straight in a pepper and tomato sauce until it soaks it all up.

What’s in the kit
- 1 × Golden Penny Spaghetti
- 2 × Gino Pepper & Onion Tomato Seasoning Mix
- 1 × Jumbo Chicken Stock Cubes
The Family size has twice as much of everything, so it feeds twice as many.
You’ll also need
- 1 red bell pepper and 1 scotch bonnet, blended
- 1 onion, sliced
- 4 tbsp vegetable oil
- 1 tsp curry powder and 1 tsp thyme
- 1 cup mixed vegetables (carrot, peas, green beans)
- 2 cups chicken stock or water
Method
- Fry the onion in the oil until soft, then add the seasoning mix and fry for 3 minutes.
- Add the blended pepper, stock cubes, curry and thyme. Cook for 8 minutes until thickened.
- Pour in the stock and bring to the boil. Break the spaghetti in half and stir it in.
- Cover and simmer for 10–12 minutes, stirring now and then so it does not stick, until the pasta is tender and the sauce absorbed.
- Stir in the vegetables for the last 3 minutes. Serve hot, with fried egg or fish if you like.
Cook’s tip: Keep it at a gentle simmer. Spaghetti gives off starch and sticks to the bottom faster than rice.
